They are no-bake, easy to make, and look pretty on the table.
Ingredients:
- 8 ounces cream cheese
- ½ cup ricotta cheese
- 1 teaspoon vanilla extract
- ⅔ cup powdered sugar
- 16-ounce container of strawberries
- Mini chocolate chips for garnish
- Graham cracker crumbs for garnish
Instructions
- In a medium-size bowl, beat together cream cheese, ricotta cheese, vanilla, and powdered sugar. Mix for about two minutes or until smooth.
- Refrigerate mixture until ready to stuff strawberries.
- Remove stems from strawberries and slice them across so that strawberries will lay flat on a plate. Hollow out the top of a strawberry or make a cross in the top so there is room for filling.
- Pipe some filling into each strawberry. Sprinkle with chocolate chips and graham cracker crumbs before serving.”

Ingredients:
- 4 Tbsp brown sugar
- 2 tsp vanilla extract
- 2 cups Greek yogurt
- 2 cups whipping cream
- Approximately 300 g (10.5 oz) graham crackers
- 5 Tbsp instant cappuccino mix
- 1/4 cup warm milk for soaking crackers
- 3 Tbsp instant cappuccino mix
- 2 Tbsp milk (water can be a substitute)
Procedure:
- Combine 3 Tbsp instant cappuccino mix with 2 Tbsp milk in a small bowl.
- Mix whipping cream in a larger bowl until soft peaks form. Then, add the cappuccino-milk mix, Greek yogurt, vanilla extract, and brown sugar.
- In a shallow plate, mix 5 Tbsp instant cappuccino mix and 1/4 cup warm milk.
- Soak the graham cracker in this mixture for a few seconds before putting it into a pan.
- Place one single layer of graham crackers in the bottom of the pan.
- Spoon 1/3 of the cream-yogurt mixture over the crackers and spread evenly.
- Repeat with at least two more layers of crackers and cream mixture.
- Cover and chill for at least 2 hours.
- Lightly dust Cappuccino Icebox Cake with cocoa powder before serving.”
