“My favorite keto recipe is Keto Tuna Salad. This is a recipe you can play around with. I love to change it up often with the seasonings, add-ons, or toppings. This is actually my favorite keto lunch recipe, and you can make it in just 5 minutes. It’s very easy, plus it has the right portion of vegetables too. And if you don’t like tuna, then you can even do it with chicken or eggs.

Ingredients:

  • 3 cans (5oz ea.) tuna, drained
  • ⅓ cup mayo of choice (or Greek yogurt)
  • 2 Tbsp diced red onion
  • 3 Tbsp diced celery
  • 2 Tbsp relish (dill for low carb, or sweet relish)
  • 1 Tbsp pickle juice (optional)
  • 1 tsp lemon juice
  • 3 Tbsp chopped pecans
  • Salt & pepper to taste

Instructions:

  • To a large bowl, add mayo or Greek yogurt, relish, pickle juice, lemon juice, salt, and pepper. Stir well to combine.
  • Add drained canned tuna, red onion, celery, and chopped pecans. Mix to coat but don’t over-mix. Season to taste as needed.
  • Serve on its own, with crackers, celery sticks, or however you like!
  • Transfer to airtight containers and store in the fridge for up to 5 days.

The recipe yields 2½ cups tuna salad. You can choose either pita or sandwich bread to go with the salad. Crackers and celery sticks are good choices too.”

“A high fat, low-carb diet could be even more effective if you find and use the best recipes. It’s like the ability to eat lots of meat and cheese guilt-free while losing weight. Cool, right?

One of my favorite recipes is Keto Bacon Cheeseburger Casserole. Here’s how to make it:

  1. Pre-heat your oven to 350 degrees F. While waiting, you may start cutting your uncured bacon and shredding your cheddar cheese.
  2. Fry your sliced bacon pieces and set them aside. Next, fry 1 to 2 pounds of grass-fed ground beef seasoned with minced garlic, onion, salt, and ground black pepper. As soon as the beef is about to turn brown (evenly cooked), you may put your bacon back in and fry them together. Afterward, transfer it to a casserole dish.
  3. Whisk together the following in a large bowl: 8 eggs, 1 cup of sugar-free salsa, and 1 cup heavy whipping cream. Add 2/3 of the cheddar cheese to the mixture and mix well.
  4. On top of the beef that you already placed in the casserole dish, pour your prepared egg mixture as layers. Add the remaining cheddar cheese on top of the casserole and place it in the pre-heated oven for at least 15 minutes. The best indicator of when your casserole is done is when the cheddar cheese topping has formed a crispy layer on top.
  5. For the final touch, garnish your favorite keto bacon cheeseburger casserole with your choice of keto-friendly toppings, such as lettuce, cheese, onions, and pickles.

The Classic Bacon and Eggs

Ingredients:

  • 2 eggs
  • 65 grams of bacon in slices
  • Cherry tomatoes
  • Thyme

I guess this is pretty self-explanatory, but here is a short summary: First fry the bacon on medium heat, take it out and use the bacon oils to fry your egg in any way you like. Take out the egg and gently fry the tomatoes for a few seconds. Then, sprinkle your thyme over the dish.

Keto Pesto Chicken Casserole, with Feta Cheese and Olives

Ingredients:

  • 170 g boneless chicken thighs
  • Salt and pepper
  • ½ Tbsp butter or coconut oil
  • 20 ml (20 g) red pesto or green pesto
  • 75 ml heavy whipping cream
  • 21 g (38 ml) pitted olives
  • 35 g feta cheese, diced
  • ¼ garlic clove, finely chopped

Steps:

  • Preheat the oven to 400°F (200°C).
  • Cut the chicken into bite-sized pieces. Season with salt and pepper.
  • Add butter or oil to a large skillet and fry the chicken pieces in batches on medium-high heat until golden brown.
  • Using store-bought low-carb red or green pesto, or making your own, mix pesto and heavy cream in a bowl.
  • Place the fried chicken pieces in a baking dish together with the olives, feta cheese, and garlic. Add the pesto/cream mixture.
  • Bake in the oven for 20-30 minutes, until the dish turns bubbly and light brown around the edges.

And voila, you have yourself a nice casserole!”

  • 2 ripe medium avocados
  • 1 teaspoon of finely chopped canned chipotle in adobo sauce (1/2 small chile)
  • 1 teaspoon Dijon mustard
  • 1 teaspoon freshly squeezed lemon juice
  • 1/2 teaspoon salt
  • 1/4 cup olive oil

Instructions:

Mix the minced avocados, canned chipotle, dijon mustard, and salt into one bowl and put them into a blender. Blend these ingredients until the mixture becomes smooth and consistent, which will take about 1 to 2 minutes. Later, drizzle olive oil and salt until properly mixed. Use within one day because it is best enjoyed fresh, or you can refrigerate it after sealing it in an airtight jar but still use it within 3 days.”

Servings: 6 tortillas

Ingredients:

  • 1 cauliflower, about 1 1/2 pounds leaves trimmed and roughly chopped
  • 2 eggs
  • Pinch of salt
  • 1 Tbsp fresh cilantro finely minced
  • Lime wedges
  • Chili salt

Instructions:

  1. Preheat the oven to 375 degrees F (190 degrees C). Line two baking sheets with parchment paper; set aside.
  2. In the bowl of a food processor, add the chopped cauliflower and pulse until you get a texture that’s a bit finer than rice.
  3. In a fine mesh steamer basket, add the cauliflower and steam over boiling water for 5 minutes.
  4. Place the steamed cauliflower in a kitchen towel and squeeze out the excess water. It’s very important to squeeze out as much water as you possibly can.
  5. Return the cauliflower to the bowl of a food processor along with the eggs, salt, and cilantro. Pulse until well combined, about 30 seconds.
  6. Spoon the tortilla mixture onto the prepared baking sheets into 6 equal portions, 3 portions per baking sheet. With an offset spatula, spread each portion into thin circles, about 5 to 6 inches in diameter.
  7. Bake the tortillas for 10 minutes, then flip and cook for another 5 minutes on the other side. Serve warm.”

  • Now, dip fries in the egg mixture first and then in the coating prepared.
  • Spread them evenly on a baking tray and bake for 20 to 25 minutes at 180 degrees.”

  • 4 lbs corned beef
  • 4 celery stalks
  • Kosher salt and black pepper
  • 2 onions
  • 1 package pickling spices
  • 1 medium cabbage cut into 2” wedges
  • 2 carrots peeled and cut into 2” pieces
  • ¼ cup mayonnaise
  • 2 tablespoons capers
  • 2 tablespoons parsley
  • 2 tablespoons apple cider vinegar
  • ½ cup dijon mustard

Once you have gathered all ingredients, follow these instructions:

  • Place corned beef, celery, onion, and pickling spices into a large pot. Add some water, season with salt and pepper, and bring to a boil.
  • Reduce heat to low and simmer for about 3 hours.
  • Add dijon mustard and apple cider vinegar in a small bowl and season with salt and pepper.
  • In another bowl, mix mayo, capers, and parsley.
  • Add cabbage and carrots and continue to simmer for about an hour until the cabbage is tender.
  • Remove meat, cabbage, and carrots from the pot.
  • Slice corned beef and season with salt and pepper.
  • Serve with your preferred sauces.”

“Keto tacos are probably my favorite go-to recipe for a quick and easy lunch or dinner. This recipe starts with using ground turkey, beef, or bison.

I saute onions and peppers in a saute pan or wok until they begin to turn translucent. Then put in a few cloves of diced garlic for about 90 seconds. After all of these veggies are thoroughly mixed, it’s time to throw in the meat.

Place your ground meat into the pan and then spice it up however you like. I like to use chili powder, salt, and pepper. Use a wooden spoon or another utensil to chop/mix up the meat until it is thoroughly cooked and looks like taco meat.

Now it’s time to make your tacos. I like using red leaf or green leaf lettuce as the shell. Get your other fixings prepared as well. I use cut avocado, lime, jalapenos, cilantro, cheese, and sour cream.

Place a spoonful (or two) of meat in the bottom of the lettuce leaf and then place all of the other toppings on as well. Wrap the taco up, and enjoy!”

One of my favorite quick and easy desserts (or snacks) is mixing sugar-free cool whip with cream cheese and adding a pack of sugar-free gelatin. Mix all of the ingredients together, and voila! Delicious. You can choose any type of gelatin you’d like, depending on which flavor profile you’re looking for.

Kickstarting vegetables is a cinch on the keto diet, too. I love to use various veggies – broccoli, cauliflower, asparagus, and Brussels sprouts. Toss them with some coconut oil or olive oil and parmesan cheese. Place in the air fryer until they’re crispy and delicious, better than a potato chip.”
